Preserving fresh basil

    Matt has a lot of basil plants on his porch that won't make it through the winter. What's the best way tp preserve them, for use through the winter besides drying them? We'd thought of basil oil, basil paste, and basil mayonaise. What do we do with lots and lots of basil, besides pesto?

    Take your kitchen shears, (or any well-scrubbed scissors) and fill an ice cube tray with itty bitty snips of the basil. Carefully fill the trays with water, and freeze. You can pop the basil-cubes out & store them in a freezer baggie, so your trays aren't being held hostage.

    When you go to make soup, spaghetti sauce, or anything else that calls for basil just pop one of your cubes in. It'll still be fresh!!!

    great idea mama!!!!!! ill have to try that!!!!....oil would be great....also...you could soften some margarine, mix in cuts of basil in there and then freeze or stick back in freezer thus making a compound butter...very flavorful....make some basil scented soap that'd be great too!!!!!!

    It can keep pretty well if you just allow it to grow inside your house where it gets a lot of sun.

    What a great idea...We dried all of our herbs this fall, but I'll have to remember that for next year. Thanks. :peace:

    Basil salt...

    Pulse your basil with kosher salt.
    Then allow to dry on parchment...
    Green saltiness of basil.
