Used to eat meat, than vegan, than vegetarian, than meat, I am now a vegetarian again and trying to stay COMITTED to staying so Anywho, here is a great recipe I tried and even my southern meat-devouring husband loved it! Shakedown Orzo! Orzo (small pasta) kidney beans spinach Romano Cheese Oregano Garlic Red Pepper Sautee the garlic, kidney beans, red pepper, oregano and spinach (fresh or frozen) in a skillet at medium heat. Olive oil works best for this Italian style meal. Cook the Orzo according to the package instructions. Drain when done and return to the pot you cooked it in. Add the kidney bean and spinach mixture and stir well. Sprinkle in some Romano Cheese and salt and pepper to taste. Enjoy with a cheap red wine for a healthy heart!

Nice recipe. I'm going to add it to my computer vegetarian cookbook, which needs some variety. It currently has about 4 recipes one how to make vegan pancakes (all of which are from here and which I plan to try. Thanks again guys), and a pretty bad recipe on how to make vegetarian tuna fish. I tried 5 or six times thruout my life to become vegetarian. Granted, I was pretty young all the times I tried (being a 7 year old vegetarian in a meat eating family is not what I call easy), but still, it's a big step. You're making a major change on your entire diet. People don't realize how much meat they consume until they give it up. So just keep trying and don't get discouraged. Wow, I really sounded Full House there. LOL.
