I seem to recall my grandmother or father using up leftover oatmeal in this way. I remember it was so yummy, but can't recreate it. (they deny they ever did it, I thik they are embarrassed we were so poor, whatever!) Take the leftover oatmeal when it has congealed, and make patties out of them. Fry them in butter until they are brown and the outside is crispy. Shake lots of cinnamon and sugar on them and eat!

Usually apple crisp is made with uncooked oats, but i don't see why you can't used cooked oats. I guess you would just add sliced apples, a cup of brown sugar, some oil (or margarine or butter), spices like cinnamon or all-spice. Spread it kind of thin, and then bake it golden brown. Might work, probably would taste ok even if it came out funky looking. Could use peaches too. Maybe doing a search for "apple crisp recipe" would give you better proportions.
