New York Strip 12 - 16 ounces. Believe it or not you can go up to any meat counter and ask for them to cut you a fresh one of any size.

But a good marinade is key.
I use a half can of beer, the darker the better, a splash of vinegar, salt, black pepper, a splash of Orange or pineapple juice, pinch of cayenne, minced garlic, minced rosemary and some mustard. Mix everything up, and put the steaks in a bag so that Theyre completely covered in the marinade. leave em for at least an hour in the marinade.

Nice Marinade. Yes, you are right cooking a steak takes time and practice. Then again so do blow jobs from what I understand. Not that I ever gave one.

 

This is the seasoning I use every single steak I have for about 2 or 3 years now, never disappoints me even if the steak isn't that good it makes it good.
