Why do we not eat this yummy vegetable more? I made turnip tonight and it was delicious. What other vegetable should we make more often than we do?
Acorn Squash stuffed with red pepper, ground beef and diced onion. Asparagus fried up with green beans in rendered bacon fat. Beets are pretty good when pickled and tossed in a salad. Buckwheat Greens are freaking awesome.
I really like those as well. I usually use butter, a couple of tablespoons of maple syrup and a good squeeze of fresh lemon to glaze them.
I like all of those but also like beets with butter and salt and pepper. What are Buckwheat greens? I have never had that.
Pretty much have to grow some Buckwheat to get any. Never saw it in stores but when I was gardening in Missouri I grew some, had a bit of a sweet flavor to it like a Romaine lettuce but more texture to it. Careful with it, has lots of oxalic acid in it like spinach so over indulgence can lead to kidney stones. I need to get myself somewhere where I can get a garden going soon I think, I miss the digging.
Get that garden going then so I can get some from you to try. I'm going to ask around at the markets and see if anyone knows anyone who has some. It sounds interesting and I would try it.

Those are tasty! I bake them with butter, brown sugar and cinnamon. I also make soup with them. Now I think I want some.

mmmm i love turnips! okra is another good veggie, though the sliminess always gets me. i love pretty much all veggies!

The toughest part of turnip is cutting it to get it ready to cook as it is a really hard vegetable. Take the ends off and then cut it into rings, peel the skin off and chop it into chunks. Put in a saucepan with water and a little brown sugar and boil them the same way you would potato. It will take about 25 minutes for them to be fork tender. Drain. I mash them with a little butter, cream and a pinch of nutmeg. You can also add them in chunks raw to stews. When I have a crowd for dinner, they all request this recipe. Trunip Puff Combine 3 cups hot mashed turnip 3 tbs butter 2 eggs beaten Add 3 tbs. flour 1 tbs brown sugar 1 tsp baking powder salt and pepper to taste Turn into a buttered baking dish. Bake at 375 for 25 minutes. This can be made ahead and then just put in the oven before needing it. I usually mke it ahead. I hope you try them, they are inexpensive. If you do not like it, it was not costly if you throw it out.
The only veggies that I am not crazy about are parsnips and cooked spinach when it is in a mound. I will eat parsnips in a stew but not alone. Spinach I love raw or cooked in with something. I just don't like it as a cooked stand alone veggie.
Thanks! I think I'll try em. I need to eat more veggies, when there was a farmers market around I ate a lot better. Now there is no farmers market, and the veggies from the store seem 1/2 as good for 2x the price.
