    For easy cleaning, place a layer of foil inside the Dutch oven and then place the food in the foil to bake it. If you have two foods in smaller amounts to prepare at the same time, place rocks in the center as dividers and make two foil pans inside. Place small flat rocks or jar rings in the bottom to elevate the pan so heat may circulate around the food to cook it evenly and to keep it from burning. (Pies and cakes can be baked very successfully in this way.)

    The day before use water to get the oil amount level right. Then place oil in the Dutch oven and set the oven over hot coals. If the oil heats up too much, remove it from the heat and wait until it cools. Fish and chips, chicken, fritters and corn dogs are a few foods that cook well this way too.

    Brown 1# ground chorizo in your dutch oven; drain. Combine 1 T olive oil, 1 medium carrot and 1 celery stalk, 1 green pepper and 1/2 yellow onion, 1 zucchini and 2 cloves garlic (diced) cook until tender-crisp. Stir in chorizo, 15 oz can of beans, 1/2 t chili powder, salt and pepper. Combine 1 cup flour, 1/4 cup corn flour, 1/2 t salt, 1 t baking powder, cut in 2 T butter until mixture resembles coarse meal, mix in 1/2 cup buttermilk and 1 T honey. Roll out dough and cut out 2 disks. Cut slits in the top of each crust to allow steam to escape and put shredded cheese between both, brush with milk, and bake.

    Sounds good, just one thing for the reader...KNOW YOUR CHORIZO!
    There are a gazillion variety's of chorizo but basically two categorys One is is simply a seasoned beef or pork sausage, can range from mild to very spicy and is sometimes pre-cooked or dried. (Some call any sausage with chili spice "chorizo")

    The other kind is uncooked, usually very spicy( hot) and is made from lymph nodes and salivary glands! It's ground quite finely and is very fatty.
    The offal gives a very distinct flavor (I love it!) some may not prefer it.
    It comes uncooked in a plastic tube like this...
