I miss snow days. They don't do that for work. I am not going to receive a call in the morning telling me not to come in, at my job the show must go on.

 

all the schools were closed around here and the roads were fine, schools are getting soft I tell ya.

 

we dont have snow days for work either.. when we got 23" in a day i still had to be to work the next morning.. i think we had like 2 tables..

Schools here lost so much money due to snow-days last year that they are only closing them if it is completely necessary.

yes it is.. I was like why is my room 63F, I thought the electric heater was on and I turned it off days ago.. Im all for saving electricity, if i can use it for something else..

 

I read that the other day. It would have to be the best sushi I ever ate. I think someone would need to be under the table blowing me at the same time. Can you picture this, if it's $370.00 a pound and an average service of tuna sushi is at least one ounce the cost alone would be $23.13 a piece. Add in the normal cost componants and making a profit then it would be around $50.00 to $75.00 per bite, depending on the profit.

its starting to snow here now we're supposed to get about 3 inches tonight.

33% food cost.. so technically.. just cents under $70.. but thats just for a 1oz portion of blue fin tuna.. thats not even including labor or other ingredients in the sushi roll

I agree with you on the 33%. That is normal food cost. However when something costs a lot of money restaurants don't always stick with that figure. I was working at a prime steak house restaurant where the steaks we were selling cost us like $35.00 each and we only sold them for like $55.00. It was grass fed really good quality and not ment as a money maker but as a way of brining people in. You know, marketing. This restaurant will most likely take a loss on the tuna but will get lots of other business in name.

 

The trees here and all covered in ice. It's so pretty. When I walk outside like everything is just covered in a shimmering sheet of ice. Imma go get some pictures....
