I'd buy a pre-2010 Les Paul Gibson Studio guitar (apparently they were made better then). I'd also buy a decent 35mm film scanner for my B&W photography. And maybe a 30mm wide-angle lens. Anything left I'd of course give to charidy (though I don't like to talk about it).

Is that a new one? You can pick up a decent second-hand one for about £700. Apparently the build quality of the new ones isn't that great these days.
