and yes, use a decent unobtrussive beer yeast. its more expensive but it won't make the cider taste like shit.

unpasteurized apple cider will be best, if you can get it.

a simple brittish ale yeast or a california common yeast or something similar will likely give good results.

baking yeast produces very little alcohol and will give it a funny taste.

for best results, once the fermentation seems to be done add just a little sugar and put CLEAN, washed, bleached and rinsed beer bottles with flip tops (like grolsh, or monschoff) and refridgerate for two or three weeks further. they should now be bubbly.

if it's not fresh pressed i would add sugar to it.. because most ciders at the store are definitely watered down.. and often are not 100% juice
