berry sorbets also but, if you are making a savory meal that bright intense flavor might, not match up well a sorbet choice is as delicate as a wine, or cheese choice. you could make a subtle rosemary/mint sorbet to go with a savory lamb meal for example. a fruit sorbet works better with a robust beef meal, or game.
what i mean by this is that, too me, non-fruit (and berry, if you think there is some kind of distinction) sorbets are wierd and less than desirable, and most other flavors would do better as ice creams. i understand your point, of balancing flavors, but if you have a meal that wouldn't pair well with a fruit sorbet, then, imo, sorbet would be the wrong choice of dessert. simply based on personal preferences, thats all. texture is all-important, not just flavor, and some flavors don't accompany some textures very well. as much as i love sorbet, i would be very surprised to enjoy a sorbet not based on fruit flavors.
I prefer sorbets for heavy meals because they are so light, in opposition with ice cream also, they do have a slightly less creamy, more fluffy texture (if they're made properly) and, sometimes after some tender meat, that more crystalline mouth feel can be desireable esp. with a heavy, or creamy drink, like some beers, some wines. also, the dairy from the cheese, if the proper cheese is selected, might have already provided the creamy mouthfeel to the meal. but, this is all very technical, I mean, there are a lot of aspects of personal preference with food and the technical aspect is something that teaches the palate, sometimes, you want food that the palate already knows and desires. for a cookoff, I'd rather teach the palate, and manipulate it to my ends. but, again, that is a matter of preference.
I'm super addicted to spicy food and pickle type stuff. In England , I always used to eat the hottest curry possible.( Which Indians would never do).But after a while it just burns out your tastebuds , so I toned it down massively.
