vegetarian sandwhich ideas?

    If ya haven't tried falafel, definitely go out n get some.... fantastic has a good mix...(or find a recipe n make your own) cook that up and eat it in a pita w/ lettuce,cukes,n tomato... (and any other vegs you like) and top it with Annie's Goddess dressing or make your own tahini dressing or yogurt dressing for it... mmmmmm they're sooo good.

    toasted whole wheat bread
    soy mayo
    sprouts
    lettuce
    tomato
    carrot shreds
    cucumber

    I don't use tahini in my humous. I got this recipe from my husband's grandma. It was brought over from Lebenon with his great grandma, so I figure it's authentic, and it tastes great! I don't measure it out anymore, cause the recipe makes way too much, but here's what I do.
    Take a can of chick peas (or soak and cook dried chick peas until soft. chill the cooked chick peas) and drain the juice into a bowl. Pour the chick peas into another bowl and add the juice of 1/2 a lemon. Add at least 2 cloves of chopped garlic and parsley to taste. Now comes the fun part, mash it all up (or cheat and use a blender or food processor) If it's too dry, add some juice from the can (or water that you cooked the peas in) and more lemon juice. Mash some more until you get the right texture. Taste and add more garlic. I have this in my fridge at all times and use it on my sandwiches, as a dip for veggies and crackers. YUM!
