Giving the avocados a rest today. I'm roasting a chicken and potatoes in the oven. My brother is here and cooking up a batch of veggies. It smells divine in here!
Its a pudding jelly base with a sponge cake, then custard, then topped with cream Ingredients For the base 500g/1lb 2oz frozen summer fruit (raspberries, blackberries, strawberries, blackcurrants and redcurrants work well) 50g/2oz caster sugar, or more to taste 2 tbsp blackcurrant or raspberry liqueur (cassis or Chambord) 500ml/18fl oz cloudy apple juice 5 sheets leaf gelatine 250g/9oz madiera cake For the custard 250g/9oz mascarpone 500ml/18floz ready-made vanilla custard For the topping 300ml/½ pint whipping cream handful toasted almonds or hazelnuts, to serve
I made an omelet earlier with tomatoes, mushrooms, and onions. I made hummus for lunch. I'm about to make a roast with carrots, potatoes, and mushrooms.
{{blinks at Fairlight}} Trifle is one of my favourite desserts. I refuse to even make it because I'd devour the whole thing myself before I could serve it!
Back to avocados today. I tried a great avocado salad recipe. Avocado, Asparagus and Cherry Tomato Salad ½ lb. asparagus, halved 1 ripe avocado, cut into cubes 3 cups halved cherry tomatoes (varied colours make for a prettier visual) ¼ cup crumbled feta cheese ¼ cup chopped basil leaves 2 Tbsp. extra virgin olive oil 1 Tbsp. lime juice 2 tsp. Dijon mustard 1/4 teaspoon sea salt 1/4 teaspoon pepper 1. Boil asparagus in pot of water for 2 minutes. Drain and immediately rinse with cold water. 2. Whisk together olive oil, lime juice, mustard, salt and pepper. 3. Add asparagus to remaining ingredients in a large bowl, stirring well to coat evenly with dressing. Serves 2
It was amazing. (Almost as good as your PB&J I'm sure ) Great blend of flavours. I'll definitely make it again.
Grilled cheese for breakfast, a cream cheese bagel for lunch (yea I cooked my own bagel I'm broke right now) and just cooked some chicken and cheese taquitos. Now I gotta hit the kitchen again, Pyrex flask wit the cash in it lol
I just cooked dinner. I baked haddock and steamed broccoli. Healthy but not so flavorful. Gotta figure out how to jazz up haddock. Sent from my iPhone using Tapatalk
