I just got the first batch of bacon out and tried a piece. Wow! I just put a second batch in. Here is a link to the rub recipe: http://www.foodnetwork.com/recipes/aaron-mccargo-jr/jerk-seasoning-recipe.html C/S, Rev J
Now that I've posted the first couple of steps my girl and I used smoked Gouda, sharp cheddar, and Parmesan to make macaroni and cheese with the candied bacon. It came out great! C/S, Rev J
That sounds amazing reverand! I'm going to have to try that. Late last night I made a mixed fruit cobbler. I wanted something sweet and the muffins just weren't doing it, so I found a bunch of frozen fruit and made one. They are so easy to make compared to other desserts imo.
Thanks! The work was worth it. When I did the rub it took a double batch for a pound of bacon and I didn't bother with the canola oil since bacon has enough natural moisture to make the rub stick. I was also surprised that the rub/coating stayed on when it went into the Mac and Cheese. I'm now also sold on slow cooking bacon it comes out on the chewier side which I like and from what I gathered it also cooks more evenly. C/S, Rev J
Chewy is how I like it. I'm going to by some bacon on my way home later and give this a shot tomorrow I think.
I'm seriously making fish and veges today. Like full serious. Been saying it for 3 days now, been eating shit too.
I bought fish cakes. I remember when I was little, fish cakes from the takeout store was the best. So I found a box and they look a touch different and no doubt won't be the same as I remember but I'm looking forward to them.
My chicken was good. I'd cooked a bunch of plain thighs so I heated some up tonight with hot sauce, ketchup, and honey.
On Wednesday I made chicken breast done with a BBQ glaze, beet and goat cheese cappellacci tossed with olive oil and goat cheese, asparagus and fresh bread. On Thursday my mom and sister came over and the request was roast beef. Made Yorkshire pudding, mashed potatoes, broccoli, cauliflower, a cheese bechamel sauce and peppercorn gravy. Last night I had all the left over roast beef and made a stir fry with it. It was delicious. I am not cooking today or tomorrow as I am going out for dinner so I will not pester you with photos.
Last night I went to my friend's birthday party and last minute decided to bring a dessert, so I made an apple pear crumble. It turned out really good even though I was just using up things in my pantry. I added some raisins that I had soaking in rum to the fruit mix. For the crumble top I used oats, pecans, flour and sugar that I mixed up in my food processor with some softened butter. I just added the pecans because I found them and decided they should be used up, but I am doing that again in the future.
