I'm so lame in this thread - all I cooked today was a microwaved sweet potato, for a snack at work. I am low on salt, but I'm definitely full of bull, lol! I'm all out of likes :|
Leftover day today, but I did make some roasted nuts the other day with my mom that I forgot to mention before. My mom did a nut mix and hers had a honey coating. I used pecan halves and tossed them in hot sauce before roasting then salt when they were done.
I'm making a weird hodgepodge of food for dinner tonight. I've got a crock pot full of Mac and cheese cooking to go with some leftover chicken breast that was marinated in fresh squeezed oranges because we did an Asian-esque thing last night. And I have an artichoke that probably won't last another day so I'm steaming it and serving with a garlicky butter sauce. Doesn't really make sense as a meal but I'm looking forward to it.
Just wondering, was that a typo and supposed to be "key" lime pie, or is it really kiwi lime pie? (Which sounds really good!)
I'm salt deprived! It's odd, but I'm actually finding things too salty. It's too early for my body to have adjusted to less salt, so I'm sure it's psychological. Salt = HBP and feeling like crap. Or maybe I'm just enjoying the herbs and spices I've started using. I think you can taste more of the flavour in food. I was afraid it was all going to be bland, but I'm not finding that at all.
lol Is that Buckwheat (no, guess it's Stymie)? Reminds me of Eddie Murphy doing Buckwheat on SNL. https://www.youtube.com/watch?v=9wo1-sI7MOQ Not sure why it's not embedding.
It's not the salt we add to food that's usually the problem, it's the salt in prepared food (canned especially, and frozen meals) and condiments. Now that I'm checking the labels, I'm amazed at how much sodium there is in everything!
satan complains we dont put salt and butter on veggies and cook them into sogginess. I like my veggies al dente , dont like them smothered in butter and salt .. wont eat our mashed potatoes because I use almond milk .. wont eat my deer meals, wont eat our baked oysters, wont eat 90% of the things we make. but she certainly will stink up the house making tv dinners in the microwave. the one with the brownie in it, christ that shit reeks.
I don't know why but when I read that post I had a flashback to Libbyland Dinners! http://theyalwayscomeback.blogspot.com/2008/02/libbyland-dinners.html
Processed or canned foods are horrible for salt content. Even the sodium reduced items are still fairly high in salt. I use very little salt and very few processed food items but probably still have more salt in our diets than our bodies need. I am not rigid about salt as we do not have health issues that require that but I am concious about it and do very little that is not made from scratch and try to be aware of the salt and sugars. Herbs and spices are great for adding flavour without the salt.
I can remember when TV dinners became the rage. In those days they were like cardboard to eat. Mom bought a few at the time but they were not such a big hit with our family. That is what happens as she was a good cook and they did not measure up to her stuff. There are some today that are not as bad and at least have a fresher appearance and taste.
Chicken Noodle soup is in the crock pot. I cook the chicken last night. I sauteed chopped garlic, onion, celery, carrots, and mushrooms in a little butter. Then put them, the cubed chicken, chicken stock, and egg noodles in the crock pot with some salt and pepper. It's going to take several hours for the noodles to get tender. I may, or may not add a can of cream of chicken soup when the cooking is done. I also might add a can of cream style corn at the end. Edit- *Eating it now and it is very good. I should have let the soup cook longer before adding the noodles. They got done but the carrots could have cooked a little longer.
