Apparently the average person eats about 4000 mg of sodium a day. The recommended daily allowance is 2300 mg. And 1500 mg or less for low sodium diet, which is what I'm on now. All your body "needs" is about 200 mg a day. With the foods I was eating and the fermented foods, I must have been over 5000 mg! Maybe more. Who woulda thunk! Out of curiosity I looked up that PC stuffed turkey breast you mentioned which I had considered trying. There is 980 mg of sodium per serving (per cup, per 1/16 package, per 195 g)! There's salt (as third ingredient) in the breast, salt in the stuffing and more salt in the gravy. This is the kind of stuff I never paid attention to before. One cup of that (and I'm sure most people eat more than that as a serving) and I'd almost be at my day's sodium allowance. I never would have thought there is that much sodium in one serving. It really is amazing how much sodium we get in our diet even when we think we're eating well.
I think for most of us some processed foods, while high are not harmful if only had periodically. I also was not aware how high that was but do not intend to give up that meal. The cleaner we eat the better that is for us in general. I think when we have to make dietary changes is when we actually realize what we are eating or should not be.
I vaguely remember reading a while back that your intake of sodium also depends a lot on your potassium intake as the two balance each other. I can't remember the details. Maybe PR will show up and school us. I had brats, sauerkraut, and rye toast tonight for dinner. There was actually very little cooking involved.
Oh absolutely. Sorry, I didn't mean to imply that you should stop eating it. I'm just miffed I can't, just as I was about to try it! :bigcry: My maximum intake is 1500 mg and at 980 for one cup, it's not worth it for me now. Once I have this all under control, I'll be able to have treats like that once in a while, gotta hold onto that! I must say though, I'm really enjoying getting back into my herbs. I used to have a culinary herb garden. Maybe I'll start one here this summer. Today I made more turkey soup, no salt at all this time. It was different, but the herbs made it really flavourful nonetheless. That might have been me mentioning it. Yes, you're supposed to take in about twice as much potassium as sodium. The problem is that most of us take in a lot more sodium than we can potassium. Potassium high foods is another thing I've been looking into. Potatoes are very high in potassium so I try to have one every day.
I honestly did not take it that way at all. I was really surprised at how much sodium was in that meal. I take a little comfort in that we do not have it all the time. I know we eat high sodium items but not on a regular basis. Now if we had HBP then it would also have to change. Big adjustment for sure. I really am interested in what you substitute as it is good for all to be a little more aware. Mia is hypoglycemic as is her dad so we have things that we have to watch for her or she is punch drunk. I love fresh herbs and I think you would really benefit also from starting to grow them again. They do pack so much flavour into dishes. I grow them all summer and wish I had more space to grow them indoors in the winter but instead resort to buying them fresh when ever I can. Glad your soup was delish!!
I ate way too many salty things all in one day once and my feet swelled up! I don't normally add salt to things and mostly cook from scratch, but that was a crazy junk food filled day. Never again. My toes were like little sausages stuck to a ham. Anyways, today I made pork heart braised in a mustard dill sauce with kale. I served it over creamy polenta. I honestly didn't love the dill sauce with the pork heart, but my boyfriend disagreed and said it went great with the polenta. Next time, I'm going to make a ragu instead with the heart I think. I am excited for the fried polenta slices I will make tomorrow with the leftovers! That's the best part!

Same old same old. I'm freezing meals because ball season is starting up. I made a meatloaf and froze it. I also made a huge cowboy casserole and will freeze probably 2/3 of it. I still have chicken to cook; also sausage. I'll probably cooked both of those tomorrow. I need to ferment one of my cabbages and cook the other. I've got new potatoes, carrots, celery, onion, bell pepper - so we will see what comes out of all that. I missed cooking anything yesterday because of a killer headache. Edit - and shrimp. I have shrimp.

I hate so much food yesterday. 3 slices of ham loaf and 2 servings of cheesy hash brown casserole. Today I am at 1571 calories and it's 3:30pm. Had 2 slices of ham loaf and left over hash brown casserole, also spinach, for brunch. 'dinner' was 2 taco's with goat meat seasoned with a taco spice packet, taco cheese, salsa and spinach instead of lettuce. Also made some rice (1/4 cup dry) cooked with an ounce of taco cheese, some salsa, dash of chili powder and salt, and spinach. Feeling fat, gained two pounds since drinking the rest of a bottle of rye whiskey the past week and a few beers. I've been stressed about my dog and not working out regularly. My dog's gaining weight too! I've been putting pumpkin and yogurt in his food and he gets so many damn cookies from everybody in the world, including me!
Wednesday my sister and mom came for dinner and we had schnitzel. I made baby potatoes, grilled tomato wedges, sautéed pepper and onions and cauliflower with a bechamel cheese sauce. Yesterday I was feeling a bit off so I did our comfort food that is easy on the tummy. Chicken and dumplings with boiled carrots, celery, baby potatoes and onion. It hit the spot. Tonight is leftover chicken.
Those grilled tomato wedges sound good. I've never made any. I may have to try it. What do you put on yours? Soup is great when you're under the weather, isn't it? It's the one thing so far I'm having a little trouble getting used to without salt. Today I made another pot of turkey soup because this dang plague went into another phase, and I added more herbs like fresh rosemary sprigs, and more veggies. Besides the onion, garlic, carrots, celery leaves and potatoes I usually use, I added celeriac and parsnips. They added some nice flavours.
I made a salmon fillet today. I brushed olive oil on it and added dried thyme and savory and baked it for about 20 minutes, broiled for about 5. And I had a mesclun salad with strawberries and red onions with a simple dressing of olive oil, apple cider vinegar and paprika. It was so good. And a handful of blackberries for dessert.
I baked boneless, skinless chicken thighs. I sauteed a clove of garlic in some olive oil, mixed in some honey mustard, and some honey barbeque sauce and that's what the chicken baked in. I baked it at 400, 20 minutes; then starting turning it every seven minutes - about 3 times; turned the oven up to 425 and baked it another 7 minutes on each side. I also boiled a head of cabbage, chopped, with salt, a beef bouillon cube, and a little beef drippings from the meatloaf the other night. It's a light dinner but it's so good!
