The oranges and the beets went so, so well together, and i've found that feta goes perfectly with beets as well. You can also make a pretty good juice with beets, ginger, and orange.

I hadn't planned to cook but I threw together some cayenne chicken smothered in onions and some sweet potatoes.
Not about something I cooked, but it's about my low sodium cooking. I had my blood pressure checked today and it went down significantly, 10 points down for systolic and 25 points down for diastolic. I was thrilled! It still has to be monitored to make sure it doesn't soar again, but my routine is working. And the best part is I don't have to take medication! It's worth the trouble of diligently keeping track of my sodium content. Ha, I came across this when I was looking up info: First the good news ... most fast food restaurants now post nutritional information for their offerings. The bad news is that it only serves to confirm that you have no business being there. I bought an array of salt-free herbs and spices. One is a pizza seasoning and when I opened it to give it a whiff, it smelled just like pizza. I'll have to make some form of low sodium pizza soon.

I put some olive oil in a skillet, put the chicken in, salt and cayenne; turned it after a few, seasoned again; put sliced onion in and seasoned it. Then I sliced sweet potatoes and put them in. I put a lid on it and cooked it until it was done.
I made a salad with kale, apples, oranges, and carrots. Sprinkled with some Parmesan cheese , black pepper, and a spoonful of tumeric powder. ACV and olive oil for the dressing. The tumeric flavor was a bit much but I'm trying to think of creative ways to introduce it into my daily diet.
I heated up some canned yuca in garlic butter and had some canned tamales. It hit the spot on this busy day.
