^^^This post is cruel and unusual punishment for those of us who are eating something besides maple glazed wild pacific salmon fillets for dinner, with couscous and a mixed salad with a maple vinaigrette. Kefir and mango for dessert.
I did that a few times. It is a lot of work. Peeling all the tomatoes, even with blanching them. Now I use whole canned tomatoes, so almost from scratch. But yes, it's so good made from fresh tomatoes.
That sounds really good. Are you vegetarian, farmout? Or do I just happen to notice the veggie based dishes you post?
breakfast was scrambled eggs with goat cheese. lunch was some diced potatoes fried with onions, and a piece of breaded sole. dinner was just some nachos with orange bell pepper and green onions.

I made homemade mac and cheese the other day! Cheddar, gouda, beer and some mustard in the sauce. I then mixed it up with pasta, ground beef and chopped up green onions and baked it with more cheese and some bread crumbs on top. Heart attack on a plate! I also made a chocolate pie for the first time yesterday! It turned out really good! I really need to exercise now...
Today, I put some cereal in a bowl, and microwaved some beans. But earlier this week, I made cupcakes for a birthday party.
Still on my maple syrup recipe binge. I made French toast for breakfast with maple syrup, and sautéed potatoes and blackberries. For lunch I made Maple Syrup Baked Acorn Squash. You mix together maple syrup and melted butter then rub in into the squash halves and bake for about an hour. Mmm, it was so good. And the best part is no peeling the squash! You just eat it right out of the rind. Easy and delicious, I'll definitely be making it again.
