not hungry now so i get to the store to get beer and try to think of what else i wanted to get. i cant remember (until i got on the pc) so i guess the pretzels that i bought will have to do.
It was too hot to cook a long meal, so I slapped a slice of beefsteak tomato on each piece of salt-free (so glad to have found this) sprouted bread with a bit of gouda cheese and basil and broiled it for a few minutes. With fresh pineapple. It really hit the spot.
This morning I baked a; onion, garlic, Zuchini, pumpkin, sweet potato and carrot vegetable tian. originally it was just a side vegetable bake for mains but it smells so good I think we will eat by itself.
I did not cook most of last week as my kitchen floor was being done. I needed some comfort food and made chicken and dumplings last night.
Did pork schnitzel tonight. New potatoes slathered in butter and pepper and sauteed peppers, red onion and mushrooms. Fresh bread and a tomato from our garden.
I didn't cook today but I made a couple of good meals this weekend. Saturday for brunch I made shrimp n grits and it was amazing, I was very proud of myself. And for Sunday dinner I made spagetti all'amatriciana , which I make about once a week now..srsly guys, the best Italian dish ever. I highly recommend it.
I made more frozen dinners today. I finished off the curry chicken with rice so cooked up more today. There isn't as much rice as it seems in the pic, I just spread it out on top so that it doesn't absorb all the curry sauce before freezing.
Last night I did meat loaf as my sister came over and had requested it. My friend came over on the weekend and brought me wax beans from his garden so we had those. Cauliflower and a cheese bechamel sauce, baby taters in butter and pepper and stewed tomato. Tonight I made fajitas with the fixings.
I finally tried boiling then frying them today. Only took me a year! They were tasty, but I found them really chewy. They're nice and tender when I make them in soup. Maybe I overcooked them when I fried them. I'll have to try them again and cook them less.
ive only ever had them chewy...never tried them in soup or stew today i took a large chicken breast cut it into chunks and wrapped the pieces with maple smoked bacon then slow cooked in the oven until the end i turn up the heat to make the bacon crunchy and burn off the water they pump into the chicken
If you ever make chicken soup, throw some in. I'm sure you'll like it. They turn out plumper and more tender, and take on the soup flavour.
