I did it the easy way and used a lot of cans - canned kidney beans, canned corn, canned tomato and chilies mix, canned beef broth, seasoned ground beef, and an onion. The tortilla was the best part, I browned the pieces in butter. And a little bit of cilantro added at the end

Yummy sauteed bok choy in garlic oil And main course- spicy ground chicken pan- fried with mixed peas and carrots and side of rice ?...if I only had tortillas... You know what sounds good? Ah, I forget what they are called, but shredded or ground chicken in rolled up corn tortlla and fried- flautas, maybe?? Or just chicken eggrolls, but I can't find the rice papers. :/ (well, maybe Amazon. Anyone order these in mail? Noodles were ok, but idk about rice papers)

Ha ha! I know Pingu! Quesadillas. Love them. I made homemade corn tortillas a while back and froze a bunch. I did it to avoid the salt in store bought since I'm on a salt restricted diet, but they ended up tasting so much better. Whenever I have leftover chicken I make a chicken quesadilla. With homemade salt free salsa and Greek yogurt. Mmmm, I'm getting hungry. Today's dinner was a tuna sandwich. I found a low sodium tuna, yayz! It was so good, I was craving it so bad.
i did not cook today...wait!...i made rice again. we ran out of onions and the day just went away like nothing, so and I need onions to cook...well, maybe not. Meh. It's too late now. I'll either get them first thing tomorrow or make that onionless thing and then get them. I had cereal breakfast and dinner and leftover chicken for lunch.
Did some searN on the grill today for her/him late lunch. Pork Tenderloin with evoo / Soy Sauce marinated grilled to just the slightest light pink inside WI mashed potatoes little packaged gravy fresh steamed broccoli water to drink. she made cookies for dessert.
Scrambled eggs for breakfast and pears fried in butter with maple syrup. Love pears this way! And I baked an oat bread. I had a tomato sandwich with it for dinner.
Vegetarian lettuce wraps for dinner. I just sautéed sliced garlic and chopped green onion, carrots, parsnips, zucchini and mushrooms in a bit of oil, then mixed in a ginger sauce. I softened glass noodles and placed them on bib lettuce leaves, then the veg mixture and topped it with diced avocado. You wrap them up as you eat or they fall apart. Gotta hold onto them! Mmm, it's one of my favourite meals. I have enough left over for lunch tomorrow.
Yesterday I cooked a ground lamb. Yes, actually ground it myself. It wasn't as spicy as we are used to. It essentially reminded me of meatloaf, so I will call it Ground Meatloaf IT was still good though. Today we went out for lunch (brunch for me ). I actually snapped a shot, but will have to upload it and post next time.
Tuna sandwich on homemade 7-grain seed bread (probably my favourite bread) with lettuce and celery and the applewood smoked cheese, and celery sticks with cream cheese. My mum used to make the celery sticks like that for us when we were kids. To get us to eat more veggies I guess. It's a nice treat!

thinking of Lucy ^^ So these are the GlutenFree "cookies" I've been meaning to make for a month. So simple-oats, bananas, apples, and honey and a pat of butter. And blueberries, not with powdered sugar but with ginger and powdered coconut powder. ?
I made some roasted garbanzo beans(chickpeas)the other day. I found a bunch of recipes. Some used canned beans, and some used beans that had only been soaked. I decided to just soak mine - I didn't want the preservatives from the canned beans. I just soaked the beans over night, tossed them in a bowl with a bit of olive oil, mixed in some garlic salt and cayenne pepper powder, then baked. I read several others, and decided to just soak. My first batch came out crunchy, like the ones at the grocery; my second batch is a little more rubbery - but I like both equally now. I think I might have used a lot more oil in my second batch.

You don't taste the coffee, but it deepens the chocolate flavour and makes the cake really moist.[/SIZE] [SIZE=10pt]And oatmeal cookies, one of my favourites. It's not the traditional oatmeal cookies. There's no brown sugar in the recipe, and I use whole wheat flour instead of white and less than half the sugar and thick rolled oats. Very oaty which is what I like about them.[/SIZE] [SIZE=10pt]And a quick breakfast of scrambled eggs with the seven grain seed bread.[/SIZE]
