    Cooked a big brunch today - pancakes with maple syrup, sausage, scrambled eggs, sliced heirloom tomatoes with salt salt salt n pepa

    I read the ingredients on one brand i've been buying for years - "imitation salad cheese" was the first ingredient

    i cooked up a bowl of flat rice noodles

    then took half a small pork tenderloin and sliced it super thin...then fried it up with some whole mushrooms..fresh ground pepper and added some honey garlic sauce near the end

    then dumped it on top the noodles

    first time trying this specific combination and it tastes great

    Today was Sandwich Day because of ball tournaments. We had the pimento cheese I made, and some peanut butter and jelly stirred together sandwiches.

    Spiralized beet, turnip, broccoli, and zucchini, with olive oil and apple cider vinegar - I also added some random salad seasoning, but I don't think I could taste it. This is my new favorite raw recipe.

    Omigosh that looks good. I bought some beets today so I just may try this!

    I made rigatoni in the slow cooker. I made it similar to the lasagna a few of us have posted here, but without the ricotta. I put in zucchini and mushrooms as one of the layers and puréed tomatoes with a bit of mozzarella over the sauce and red bell peppers on the top layer. I put a last layer of rigatoni noodles, like the lasagna noodles called for but since they're not flat like lasagna, the tomato purée you put on top leaks down so the noodles aren't covered well and the top noodles were pretty hard. Next time I'll omit that layer altogether. The noodles in the other layers were fine and it turned out really good otherwise. I like the rigatoni with the added vegetables.

    tonight was eggtoast

    two eggs dropped in a non stick fry pan...and same time 2 pieces of bread go into the toaster

    then when toast is ready you break the yolk on the half cooked eggs add black pepper and smoosh a toast on each egg and wait for them to finish cooking

    Does everyone in USA/Canada/rest of the world have one?

    Never heard of anyone here having it.

    I'm cooking Cabagge Sauteed with Chicken. I think I'll have a side dish of Buttered Egg Noodles since we've had rice, and potatoes, recently.

    They say it's a Ukraine dish, normally made with beef or pork.

    dutch oven but its electric instead of cast iron

    kind of like a rice cooker


    i had eggtoast again for breakfast/lunch

    I have a slow cooker/crock pot; electric skillet; and electric roaster.

    The slow cooker is great for people to use while away from home.

    The electric skillet is big so it's handy.

    The electric roaster is so I don't have to heat up the house with the big oven.

    This came out very good. I cooked it longer than the recipe says, adding more chicken broth.

    It's a wet type of cooking, you won't get a roasted type meal. That's why it's good for pasta meals like the lasagna and rigatoni. dishes. You put in the noodles uncooked (not the precooked type, just regular ones) and the moisture makes them come out perfect. A big plus is if you turn it on low, and put a meal in it in the morning and it's ready for dinner, particularly good for people who work all day. Nice to come home to a home cooked meal.

    i think i posted before about my other way with bacon or ham...same idea but you make the toast first then take a strip of bacon per toast and cut it into two pieces ...start cooking the bacon then take the toast and cut out the center with an upside down glass...put the toast on the bacon and try to squish the gaps closed then crack an egg into the hole ...after it cooks a bit smush the cut out piece into the uncooked part of the egg and keep flipping it until its cooked thru

    That sounds really good too. I don't eat bacon or ham too often because of the salt thing, maybe I'll save it for one of my "salt days". I made your smooshed eggtoast for breakfast. It was good, I like it! The bread I make is smaller than regular bread so when I smooshed it into the egg, some of the yolk oozed out from under the bread. lol Next time I won't smoosh as hard.

    And for lunch raw zucchini nooodles with a mango avocado dressing. You purée the mango and avocado with green onions, about half a hot pepper and lime juice. Yum! Tomorrow I may try Expanse's beet noodle concoction.

    Here's a new idea for you. Running shoe sushi! :-D Do you like sushi? If I'd make it, it would be a Saucony shoe instead of Nike.
