Have a Haggis defrosting at the moment, when its thawed, will place in casserole dish and heat in the oven. In the meantime I will peel and chop sweet potato, swede, pparsnip & celeriac and steam them. When the veg is cooked I will strain into a bowl, add a large knob of butter and mash the veg into a pulp, Then I'll empty that onto a plate and place the Haggis on top and cover it all in a rich gravy.
Simple breakfast bowl with brown rice, egg, fresh ginger, and scallion, topped with furikake and shichimi for spice
cous cous with garlic, spring onion and cheese. Using garlic because it's a great preventative measure to ward off flu bugs.
Supermarket brought me a smoked Gammon joint yesterday. Today I placed it in an oven dish, studded it with cloves, poured some honey over it and wrapped it in foil. Roasted (slowly) in my oven for about 2 hours. I have alllowed it to cool, and before re-wrapping it and storing in my fridge, I couldn't resist the temptation of cutting off a couple of slices and munching !!! - even if I do say so myself, it is fabulous !!!
Later this afternoon, I will cut a couple more slices of ham from the joint, placed on a plate to which I shall add a couple of sausages, some mushrooms, a couple of eggs, a slice of black pudding.
I got side-tracked yesterday, so never got round to doing my 'proper' lunch. Change of plan today too - going to make a 'scrunch' - chop up a couple of sausages, slice a couple of potatoes and black pudding, add some chopped muchroooms and as all that cooks, will break a couple of eggs into the pan too. Have already sliced two thickish wedges from the bacon joint, so when its all cooked, just lump it all on the plate !!!
