Mmm, moussaka. I bought ingredients yesterday for kimchi so I'll be making it soon. I'm going to try Napa cabbage, Daikon radish, Fresno chili pepper, fresh ginger, red onion, purple garlic. And red cabbage and carrots for sauerkraut. I'm going to try it two ways, with and without water. How long do y'all leave it to ferment? I see anywhere from a few days to 4 weeks or even more. Any advantage to shorter or longer times? (Beyond being able to stuff your face sooner.)
Duck is delicious, it's extremly dense and flavorful. I love wild meats in general, I'm into their punchy flavors and dense textures, plus in general they're pretty lean. I made some peach meatballs, with rice and sautéed mustard greens for supper tonight, was good!
I love the gamey taste too. I bought a leg of lamb that was finally a decent price. Looking forward to making that soon. Tonight I had Pad Thai. Yum! Eggsprog, the ducks are usually in the frozen section where the turkeys are. Might even find pheasant there. Been a while since I've had that.
Tonight I made some breaded fish, with fried kale and mashed potatoes. I love that kind of simple, earthy meals, they're the tastiest and most comforting food there is.
I finally got to making the kimchi and sauerkraut today. For the kimchi I used Napa cabbage, daikon radish, red onion, garlic, fresh ginger, and red Fresno hot peppers. For the sauerkraut… green cabbage, red cabbage and carrots. I used Heather's suggestion of putting a cabbage leaf on top to hold down the ingredients. I was out of cheesecloth so I covered the jars with coffee filters and secured them with elastics. I used about a teaspoon of salt per pint of water and I added some liquid from the last jar of sauerkraut to help the fermentation along. In a few weeks I'm hoping to enjoy the fruits of my labour. And labourious it was, especially the cleanup… I had chopped cabbage everywhere. lol But it was fun making it. Guess everyone has been starving themselves this week. lol I made pork chops today, with baked cinnamon apples, baked potato slices with paprika, and cucumber. Yum!
Busy week, no time to good. I've been making quick, easy, carb-heavy meals and buying pizza at the school cafeteria. I'm going to come up with something delicious to make this weekend. I'm thinking of trying my hand at crepes.
I was a bit too busy to post what I cooked lately! We had fried chicken, mac'n'cheese, moussaka, pepper steaks and lasagna among other things, all homemade.
I didn't cook but my boyfriend made me a yummy pasta with a cheesy buttery herby sauce...he knew the Italian name for it but I do not recall. We also had steamed artichoke dipped in garlic butter.
Whatcha doing that you're so busy, Bass? ;-) OMG I love crepes! The pasta and artichokes sound delicious too. I just had a roast beef sandwich and some red grapes so far today. Nothing to write home about. And hot tea. I was out at the lake early this morning and it was bitterly cold. But the sun was shining brightly.
Tonight I'm making my go-to awesome meal: salmon baked in a cast iron pan, goat cheese risotto, and I'll probably cook some frozen veggies to make it a bit more balanced.
Oh well not that much, let's see... I take care of a baby, a hubby, 5 pets and a household, worked to find a new home for a cat we rescued, write a zine on positive body image, plus I have an active social life in addition to cook kickass meals (usually from scratch). Tonight it's gonna be sweet&sour pork chops, with mustard greens, sautéed spiced apples, mashed potatoes and gravy.
