The last batch of fermented vegetables are in the fridge now. Here's the lowdown. The mini cukes could have used less time. I had them in for 6 days, but 3 or 4 would have been enough, they were a little soft. I would put in a little less garlic and more dill next time too. The kohlrabi and the kale are the perfect texture. The kohlrabi is my favourite, it's really good, just the right amount of crunch, with that nice bit of a sweet taste it has. I forgot to report on the batch before this one where I used fennel. I was disappointed because the fermenting took away the licorice taste that fennel naturally has. But it did turn out well otherwise. I bought a few beets to try. That will be my next endeavour.
today i took some stewing beef chunks and sliced them real thin...soaked them in szechuan sauce then fried them up and added soya sauce and a bunch of broccoli
ok guys, you got to try this 1cup brown rice 1 sweet potato cubed and cooked chicken breast throw on some cayenne pepper, salt , pepper or w/e don't sleep on this one!!! the combo is a good one next time ill post a pic of it
I made a big pot of seafood chowder yesterday, so that was lunch today. In this batch I used clams, oysters, crab, shrimp, scallops and langoustines, with potatoes, carrots and celery, onions and garlic, and made with coconut milk. Yum, it turned out really good. Dinner is going to be ham sandwiches with bread I'm making in the bread machine, a kamut-oatmeal bread with flax seed. Can't wait until it's done, I love the smell of fresh baked bread.
Nothing beats the smell of bread cooking except for eating it warm smothered in butter. Tonight we had smoked sausages, cheese perogies, sour cream, sauerkraut, asparagus and spicy chili sauce for the sausages. View attachment 1178
I love soup. Mia would eat nothing but soup that is homemade if she could. Something about a pot of soup simmering says home!!
soup is the best. I have no qualms with cooking a big pot and eating it for breakfast lunch and dinner for 3 days
I'm liking to make the soups more and more. I mostly have to cook around what hubby can eat right now and they seem to suit him.
Had sausages left from last night so I threw together a tomato based sauce with garlic, onion, basil, chili peppers. Made tri-veggie penne and tossed it with the sauce and fresh basil and chives and shaved parm. A Caesar salad and Italian bread to finish it off. That was dinner. View attachment 1181
I made a lamb chili in the crockpot - ground lamb, chickpeas, tomato, onion, serrano pepper. It didn't turn out quite as good as I expected. I seasoned with fresh rosemary, terragon, thyme, tumeric, coriander, fenugreek. I think next time I'll go more Mediterranean, less middle eastern and leave off some of the spices, maybe add basil and oregano.
I worked on another batch of kimchi and fermented veggies. They didn't have kohlrabi this time, so I made 3 jars of green cabbage, and one each of beets and mini cucumbers. This time I used pickling spice for the cukes, along with garlic and chili pepper. I'll leave the cukes for only 3 or 4 days and see if they turn out better than the last batch. The chili pepper I tried this time is called Cherry Hot, hotter than the Fresno I used last time. I cut them in two so I can easily take them out if I find the veggies getting too spicy as they sit in the fridge after they're ready. I also made a tri-colour fusilli pasta salad. I put in artichokes, black olives, yellow bell peppers, red onions, tomatoes, and a mix of beans, all tossed with olive oil and basil and black pepper with a bit of Himalayan sea salt. It turned out very tasty.
