Wednesday I made a meat loaf. Oven roasted potatoes, heirloom carrots and a tomato cucumber salad plate. Stewed tomato chutney as well. I also prepared cheese and spinach cannelloni for Jaz (she does not eat beef) with a sweet basil tomato sauce and parm. View attachment 1357 Last night I made steak for myself and salmon lobster pinwheels for Jaz and Mia. Asparagus and home made oven fries. I also made a tomato and cucumber plate again as I have been buying these tri coloured vine tomatoes that are delicious. View attachment 1358 This morning I pulled out the last of my frozen tomatoes from last summer and started a batch of spaghetti sauce. It is now simmering on the stove. It smells so good! Done and ready for the freezer. This batch will do us until summer. I did up four little pots to give to my mom as she is alone and does not make sauce for just her. View attachment 1360
I haven't had an omelette in ages. Today I made a country omelette with red onion, hot banana peppers, mushrooms, Colby cheese and a grated romano-parmesan-asiago blend, and dill and tarragon, with fried kobassa and strawberries.
French toast for breakfast this morning, with maple syrup. Dinner is going to be homemade veggie soup… it's dang cold and wet outside and supposed to keep it up for almost 2 weeks.
Sourdough bread toasted and drizzled with olive oil, white wine vinegar and salsa. Then topped with an assortment of greens and sliced olives.
I finally got a chance to try to make some. I used ground up seaweed instead of fish sauce, and no sugar. The garlic and ginger smelled so good that I was happy to eat what didn't fit in the jar, when I was finished packing it.
I made a simple pasta dish today. I sauteed sausage, onions, garlic, and tomatoes in olive oil then threw it over some penne and mixed in about 1/4 cup of parmesan cheese and fresh basil
It was kimchi making time again today! chili peppers - I only put one in each jar this time and only made a small slit in them. The last time the pith must have made it into the jar so that even when I took out the peppers, the kimchi kept getting hotter and hotter. I had steam coming out my ears by the end of the batch! garlic shredded green and red cabbage and carrots Et voila! It's the jars that are purple, not the contents. I used taller jars this time so they'll take up less room.
I had a craving for an omelette today, so I made a classic dill omelette with pears and pumpernickel with butter and caraway seeds sprinkled on top. It really hit the spot.
Here's another one for you! Sunny side up this time, with maple bacon and orange wedges. It went down really well.
