That looks delicious.I used to make my own lasagne from scratch too.I'm so hungry I could lick my computer screen...Just got three bean soup for lunch though as I'm on a health trip since I got diagnosed with type 2 diabetes recently...Not a death sentence but I have to cut out sugars,pasta and potatoes from my diet.Of course I will still be able to indulge occasionally.
It was really good. Sorry to hear about your health problem. You can still make lasagna by substituting the pasta with thin strips of eggplant.
How did you make your paleo pancakes? I love pancakes but regular pancakes have zero nutritional content so I don't eat them much anymore
I'm currently on a low-carb diet, the grain-brain diet. Tonite I made roasted brussels sprouts and sautéed shrimp in olive oil with plenty of garlic, cumin and paprika. I sprinkled balsamic vinegar on the brussels sprouts after they were done. It came out great. In the future, I'll try to take a photo.
These have tons of nutritional content! Mix together 3 eggs and 2 mashed bananas, then add 3tbs of coconut flour and 1tsp cinnamon. Then fry 1/4 cup of the batter per cake on low in coconut oil. It takes a little practice to fry them since they don't hold together like regular pancakes. I usually let them cook on one side until they're cooked all the way around the edges before flipping.
I didn't really cook anything today. I made myself a wrap with avocado, tomato, onion, sriracha, baby spinach and turkey. It was more like a tiny taco with non taco ingredients. I ate one at lunch and ate another one at dinner because I didn't want the other half of my avocado to go to waste. We have really weird eating habits here. Everyone eats something different at different times of the day. Sophia had a ton of strawberries, some heart to heart cereal, a sandwich with cream cheese and turkey and a couple chicken nuggets. I made quinoa and pineapple teriyaki veggies: cauliflower, green pepper, broccoli, zucchini. My kids ate it all so I can't tell you how it tasted, but they totally devoured it and since kids have more taste buds than adults, I'd say it was probably pretty tasty.
I made some brown rice with spinach and added a bit of tomato juice and lemon juice. Yum. Also some steamed potatoes (cut like fries) with a tomato-beet dip.
