I didn't cook today but last week I made homemade whole wheat perogies, whole wheat gnocchi with rose sauce (potatoes were on sale), butter chicken with sweet potatoes and chilli. I also made my own Ice cream out of a big bag of random fruit I found on sale and some coconut milk. I live to cook!

My roommate made dinner tonight though so I didn't have to do anything. She made pork chops in tomato sauce with pasta. Yummy!

Thanks! The tortellini did take a lot of work, but the perogies and gnocchi are way less time consuming.

Awesome! I made pasta once, way too messy for me.

Lamb chops tonight, on the grill if the weather holds.

When you need a single jalapeño for yesterday's dinner but the market around the corner only sells them in 8 packs (wtf?), good things happen. Bacon wrapped cheese stuffed jalapeños, with a salad to keep it healthful.

Surely you can't eat all that by yourself. What's your address? :-D

I shouldn't be in this thread at this time of night, it's too late to eat! Is better go to bed.

You need a bigger plate! That looks amazing. It would do me two meals though. Maybe three. lol All it needs is a spoonful or two of spicy salsa.

I haven't been taking pics of my meals but the other day I had a scrumptious eggplant lasagna (the noodles are substituted by the eggplant), though I didn't make it. I did make cumin hummus and today I made guacamole. With peaches and cream for dessert.

Yes, indeed there is a lot of food on that plate, but it was preceded by a 16+ hour fast and followed by a 24 hour fast. I couldn't eat like that if I was eating three plus meals a day, which I sometimes do, but then the amount of food I am eating with each meal is far less.

Spicy salsa sounds good, or maybe even some Sriracha.

Rooster sauce! Actually I prefer Cholula. I find Sriracha too sweet. Cholula has no sugar and also no artificial preservatives. I like the taste better too, not sure whether that's because of the spices or the chili peppers they use. Sriracha uses red jalapeños, Cholula uses piquin and arbol chills. And it comes in a prettier bottle! lol

You don't find it hard to eat that much after a fast? If I haven't eaten much for a few days then try have a big meal, I can't manage it. It stretches my stomach past capacity until I'm physically ill. Maybe one day wouldn't make as much of a difference.
