what did you have for dinner/what do you think of my dish?

    i made chili with ground elk and frijoles pintos. it was freaking awesome. night before last we had fajitas with our elk. it's the best damn meat. it's been sooooo long since we've had any elk. it's nice to reintroduce a little clean red meat. it smells so fresh and clean. i know people like to get the great big animals, but i don't see the point. the smaller ones taste better, and honestly, do you wanna kill off all the good genes in a community for a fucking head to mount on a wall? though you do get a good deal less meat. but the QUALITY.

    That sounds absolutely delicious. I've never tasted elk but if the opportunity ever arises, I will jump at the chance now.

    I've just had a big BBQ of fresh chicken and duck that we killed at my friend's dads farm this evening with all sorts of fresh veggies from the garden. All washed down with ice cold beer. I'm stuffed.:)

    depending upon where you find your elk, the flavor varies quite a bit. new mexico elk tends to have a slight scent of sage, if you're doing a depredation hunt on a farm or something where they grow grass, alfalfa or soy, it'll be sweeter. but there's no fat whatsoever. if you're going to brown the meat, you have to use olive oil and brown it slowly. if you're grilling it, you have to marinate it if it's thin, and baby it along. but it doesn't really need anything but salt and pepper.

    Sounds absolutely delicious but I think the elk plan will have to stay on hold for a while. I haven't heard of many herds of elk roaming the rice fields in Thailand.

    The description you gave of the meat sounds a lot like ostrich meat. This is another great meat with about 0% fat. I think I will have some soon, its yummy.

    oryx is spectacular, too, but it's really hard to get a tag. they're on the white sands missile range in new mexico, so if you win the hunt, you're escorted by military people as well as an approved guide. but they're beautiful, and they're so TENDER.

    wtf is an oryx? back home in virginia there is an ostrich farm on the way out to the country where some of my friends lived. those things are fuckin funny man. one of the best things to do is smoke a blunt while driving out there and when you drive past the farm, if the ostriches run next to the car along the fence you laugh so hard!

    I believe it's a type of antelope(or cousin maybe). It's got 2 long straight horns and is native to Africa. Plus , according to KC it's really delicious. That is where my knowledge ends.

    I think your ratatouille looks yummy :D although I must admit, I prefer crunchier veggies simply because I'm not a fan of the texture of soft veggies ....
